I'm new to this forum and I wanted to update my profile. But, I can't find a way to do that. All the profile button does is show me user stats. Is there a way to get to my profile to change/update it?

Newbie status may not allow certain things.
You may have to wait until you have enough posts to clear your Newbie status.
The profile tab does not give you the options to change your profile. That probably does indicate a Newbie has to wait until the Newbie status has cleared.

Ya, newbie is listed under my user name, but there is no text to tell what I can't, or can, do under the profile tab. This is the first forum where a brand new user is not allowed to modify their settings.

It is probably a Spam deterrent.
Occasionally Newbies after joining. Would edit their profile and put spam in the profile.

Actually many forums don't allow new users to change there settings untill they have gone threw some sort of probation period.
This is as Brian stated just one spam prevention measure this forum uses.

Every forum that I have joined, and there have been many over the many years, have always allowed new users to modify their profiles. I guess I must have joined the ones that allow it.

Some forum software is more customizable then others. I've seen many that use no new user restrictions and of those most are littered with spam posts.
Spammers tend to target forums with large user bases more then ones with a small user base.
No one anti spam approach is perfect. Early Community Organizers chose a post count over captcha and other options available for new users. Once a new users status changes from newbie many more posting options are available besides editing ones profile.

I have run into very few forums whereby the first few posts needed admin approval, but I believe I was still able to modify my profile. I do not remember for sure.

I created an account with a site and their spam prevention measures are that users cannot create new threads until doing 10 posts and 30 days have passed. Ouch!
