I've read the DS7000 manual and it doesn't
say anything about the 2 dials on the
console and how to use them or what they
are for.

One dial is labeled unit and is next to the
record button. The other is labelled house
and is next to the bypass buton.

If you have the same manual as I do look at
page 13 Adding a Lamp Module and page 8 for
the Keychain Remote.
Almost all X10 modules have an address that
they respond to. There are 16 House Codes
that can contain 16 unit codes. Basically if
you set your console to House B Unit 1. The
remotes Lights ON Lights OFF buttons will
control any module set to B1.
Also see pages 16 and 17 as arming in
certain modes lights the modules set in the
address for delayed exit before being armed.
Then they go back off and the console is
armed
