How sensitive are the motion detectors? Will my cat set them
off?

Yes, they  detect changes in
the "Temperature Picture" they "see" so a
cat is big enough for them to "see"

will they work in Arizona where the night
temperature can be more then body heat?

Yes,

They basically take a "Picture" of current
temperature image and anything that moves
into their "visual field" Changes
that "picture"  triggering the sensor

Pros create a "pet alley" using a special
motion detector, or by simply taping off
part of the motion detector window. Then
the motion detector can only "see" the
upper portion of the room. It works great
for dogs, but not so good for cats that
might jump up on cabinets or even curtian
rods.

I tilted my Motions way back to avoid seeing
the cat. I might open the case up and tape
off the lower part. Seem to me the sensor
would look better mounted more up right.
